Tacos are a staple food in Mexican cuisine. The original tacos didn’t have lettuce, cheese or sour cream. Mexicans used to make them with soft tortillas and fill them with fish and other cooked organs.

What exactly are tacos dorados?

When we talk about Tacos Dorados, we talk about flour or corn tortillas, with some sort of filling (continue reading and you will find out one of the best fillings there are!), that are deep fried and topped with a sauce or cheese. They may resemble “hard shell tacos” and tostadas but what distinguishes them is the way in which they are rolled.

How to make the perfect Taco Dorado

Among Mexico’s favourites are Tacos Dorados. Follow the recipe below and make them at home! Remember that one of the best things about this dish is that you can fill tacos with whatever ingredient you have in your pantry or fridge.

Ingredients

  • Corn tortillas.
  • Shredded chicken.
  • 2 large potatoes.
  • ½ cup onions.
  • Garlic.
  • 2 tablespoons of flour.
  • Shredded cheese.
  • Olive oil.
  • Paprika.
  • Black pepper.
  • Salt.

 

How to make it

  1. First, you will have to cook the potatoes. Put two uncooked potatoes and leave them with their skin. Top them with water, turn on the heat and bring it all to a boil. After about twenty minutes, your potatoes should be thoroughly cooked. Let them cool down to room temperature and peel them.
  2. Add two tablespoons of olive oil to a skillet and sautée your onions and garlic.
  3. In a separate bowl, add your onion, garlic and potatoes. Now is the time to mash them with a fork or a potato masher.
  4. Add two tablespoons of flour, salt, pepper and any other seasoning you like, for instance, chilli powder or paprika.
  5. If you eat meat, you can add shredded chicken or shredded beef to the mixture. Make sure to combine all the ingredients together so that the filling doesn’t escape from our tortillas once we cook them. If you don’t eat meat, another option is just to add shredded cheese and scallions.
  6. Before frying the tacos, we have to turn them into little rolls. For assembling them, you can warm the tortillas up in the microwave (try using a Ziploc bag so that they don’t dry up) or heat them next to some heat source (just not directly!). Add your filling with a spoon, and make sure you don’t overfill the tortillas so that the filling remains inside our little soon-to-be golden taco.
  7. Add oil to a large skillet and heat it up. Fry your tacos for about forty to forty-five minutes per side.
  8. Once they are golden brown, remove the tacos from the skillet and place them over paper towels to drain the excess oil.

 

Don’t forget the toppings!

Golden tacos are served on a plate and they are nothing without their toppings. We are talking about veggies, sour cream, cheese sauces, and chilli sauces… this is your opportunity to get as imaginative as you like.
